Lime Jello Salad - cooking recipe
Ingredients

1 3 oz. box lime jello
15 large marshmallows
1 c. crushed pineapple (drained and reserve juice)
1/2 pt. whipping cream, whipped
1/2 c. boiling water
1/2 c. pineapple juice (reserved from crushed pineapple)
1/2 pt. small curd cottage cheese
Preparation

Dissolve jello in water.
Add marshmallows and place over low heat, stirring until completely dissolved.
Add pineapple juice and let set until partially jelled.
Add pineapple, cottage cheese and whipped cream.
Stir as little as possible to mix and pour into mold.
Chill until firm.
You can add 1/2 cup chopped pecans to this salad if you like them (I think it really makes it better). If you don't want to put this in a mold, you can pour it into a 9x13x2 pan and cut into squares to serve.
This is another good company dish.
It can be done in advance and forgotten until serving time.
