Carrot Cake - cooking recipe
Ingredients

2 c. sifted plain flour
2 tsp. baking powder
1 1/2 Tbsp. baking soda
1 1/2 tsp. salt
2 tsp. ground cinnamon
pinch of cloves
2 c. sugar
1/2 c. chopped nuts
1 1/2 c. oil
4 eggs
1 c. raisins*
2 c. finely grated carrots
18 oz. crushed pineapple, drained
1 (3 1/2 oz.) can flaked coconut
Preparation

*Ahead of time, pour boiling water over raisins.
Let cool to plump them up.
