Spanish Chicken Bake - cooking recipe

Ingredients
    2 broiler-fryers, quartered (about 2 1/2 lb. each)
    1/4 c. all-purpose flour
    1/4 c. vegetable oil
    1 1/2 c. regular rice
    3 c. water
    1 envelope Spanish rice seasoning mix
    1 large green pepper, cut into 8 rings
    1 c. sliced stuffed green olives
Preparation
    Shake chicken with flour in plastic bag to coat well.
    Brown a few pieces at a time in oil in large skillet.
    Drain on paper toweling.
