Zucchini Bake - cooking recipe
Ingredients

4 medium size zucchini (about 1 1/2 lb. total)
1/2 tsp. salt
3 eggs
3 Tbsp. all-purpose flour
1/4 c. grated Parmesan cheese
1 clove garlic, minced or pressed
3/4 tsp. oregano leaves
1/8 tsp. pepper
1/4 c. each finely chopped parsley and sliced green onions (including tops)
vegetable oil cooking spray
15 cherry tomatoes, halved
Preparation

Using a food processor or grater, coarsely shred zucchini (you should have about 4 cups). Sprinkle with salt; let stand in a colander for 15 minutes. Squeeze with your hands to press out moisture.
