Morning Glorious Muffins - cooking recipe

Ingredients
    2 c. flour
    1 1/4 c. sugar
    2 tsp. baking soda
    1/2 tsp. salt
    2 tsp. cinnamon
    1 1/2 c. finely shredded carrot
    1 1/2 c. peeled and shredded apple
    3/4 c. coconut
    1/2 c. snipped pitted dates
    1/2 c. chopped pecans
    3 beaten eggs
    1 c. cooking oil
    1/2 tsp. vanilla
Preparation
    Combine flour, sugar, soda, cinnamon and salt.
    In another bowl, combine carrot, apple, coconut, dates and pecans.
    Stir in beaten eggs, oil and vanilla.
    Add to dry ingredients, stirring until moistened.
    Grease or line muffin pans.
    Spoon batter into muffin pans.
    Fill batter almost level with top of bake-cups; bakes into nicely rounded muffins.
    Bake in 375\u00b0 oven for 20 to 25 minutes.
    Watch carefully to prevent over-browning.
    Remove from pans; cool on wire racks.
    Makes about 24 muffins.
    Contain 207 calories each.
