4 Vidalia onions
2 Tbsp. butter or margarine
1/2 c. plain yogurt
1 Tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
2 tsp. finely minced parsley
1/2 c. brown sugar
Preparation

Preheat oven to 375\u00b0.
Place the onions, unpeeled, on a foil-lined shallow pan and bake until tender, about 1 1/2 hours. Warm a heatproof 1-quart shallow serving dish.
When onions are tender, remove from oven.
Spear the onions with a fork and peel by cutting off both ends of the onion and removing skin.
Place the onions in the warmed dish and distribute the butter and yogurt over the tops of the onions.
Sprinkle lemon juice, sugar, salt, pepper and parsley over onions and serve.
Yield:
4 onions.
