Penne With Vegetables - cooking recipe
Ingredients

1 8 oz. pasta, cooked & drained
1 tbsp. extra virgin olive oil
1 med. onion, chopped
2 cloves garlic, crushed
2 tbsp. butter
3 tbsp. flour
1 1/2 c. skim milk
1 1/2 c. fat free Half & Half
1 c. gr. Parmesan
2 tsp. dried Ital. seasoning
Salt, pepper to taste
1 14 oz can diced tomatoes, seasoned
1 10 oz. pkg. frozen chopped spinach, thawed & drained
Preparation

In a small sauce pan, saute onions & garlic in olive oil until browned.
In large sauce pan, melt butter.
Add flour & stir.
Slowly add Half & Half and milk, simmer, stirring constantly till thickened.
Add cheese & seasonings.
Stir until cheese melts and add tomatoes, spinach and onion mixture.
Heat through.
Pour over warmed pasta toss and serve.
