Zucchini Raisin Nut Bread - cooking recipe

Ingredients
    2 c. shredded zucchini
    2 c. sugar
    1 c. oil
    3 eggs
    1 Tbsp. vanilla
    3 c. flour
    1 Tbsp. cinnamon
    1 tsp. nutmeg
    1 tsp. baking powder
    1 c. raisins
    1 c. walnuts
    1/2 c. coconut
Preparation
    Cream sugar and oil.
    Add eggs, zucchini and vanilla.
    Mix well.
    Combine flour, cinnamon, nutmeg and baking powder.
    Mix well.
    Add raisins, nuts and coconut to dry ingredients.
    Add to zucchini mixture.
    Mix well.
    Pour into greased and floured 9 x 5-inch loaf pan.
    Bake at 350\u00b0 for 1 hour; cool.
    Makes 2 loaves.
