Super Eggplant Casserole - cooking recipe

Ingredients
    1 large or 2 small eggplants, peeled
    1/4 c. butter
    1/4 chopped onion
    2 medium tomatoes, peeled and diced
    1 lb. ground meat (lean)
    1 c. cooked rice
    1 tsp. seasoned salt
    1/2 tsp. sweet basil, crumbled
    1/4 c. shredded Cheddar cheese
Preparation
    Cut up eggplant into 1-inch square pieces.
    Parboil about 5 minutes.
    Drain and set aside.
    Melt butter in skillet over medium heat.
    Add onion, meat and tomatoes and saute about 5 minutes or until tender.
    Add meat mixture plus cooked rice and seasonings to eggplant and mix well.
    Spoon mixture into buttered casserole dish and sprinkle with cheese.
    Bake at 350\u00b0 for 30 to 40 minutes or until the cheese is melted and eggplant is tender.
