Ingredients

1 pkg. quick rise yeast
2 c. flour
1 tsp. salt
1 c. very warm water
1 Tbsp. oil
1 zucchini, diced
1 yellow squash, diced
1 large tomato, seeded and diced
10 oz. frozen spinach, thawed and drained
1/2 tsp. oregano
4 to 8 oz. low-fat Mozzarella cheese
Preparation

Mix the yeast with water.
Add the flour and salt.
Knead. Cover and let rest while you assemble filling.
