Chow'S Chicken Long Rice - cooking recipe

Ingredients
    2 lb. chicken thighs or wings, cut in halves or thirds
    2 Tbsp. oil
    4 c. water
    1 Tbsp. salt
    1 Tbsp. shoyu
    1/2-inch piece ginger, crushed
    2 bundles long rice, soaked in hot water
    1 can bamboo shoots, sliced thin
    6 dried mushrooms, soaked and sliced thin
    1 can sliced water chestnuts
    green onion
Preparation
    Saute
    chicken\tin
    oil.
    Add water and crushed ginger; cook until
    tender.
    Add
    mushrooms,
    bamboo shoots and water chestnuts.\tSeason\twith
    salt
    and shoyu.\tAdd soaked and cut long rice; cook for 10 minutes.
    Garnish with green onion.
