Stuffed Baked Potatoes - cooking recipe
Ingredients

8 medium-size potatoes
1 egg
1 c. sour cream
2 Tbsp. chives (dried, frozen or fresh)
salt to taste
1 c. shredded Cheddar cheese
paprika
Preparation

Bake potatoes in 350\u00b0 oven for 1 hour or until done. Cut in half lengthwise and scoop out inside. With mixer, whip potatoes and add sour cream. Then add egg, chives and salt to taste. Let cool and last, add cheese. Fill halves with potato mixture and sprinkle with paprika. Bake at 350\u00b0 for 20 minutes or put in plastic freezer bags and freeze for later use. (These freeze beautifully!)
