Sweet Potato Fries - cooking recipe

Ingredients
    2 large yams
    1 c. peanut oil
    salt to taste
Preparation
    Cut yams into long strips, leaving skin on.
    Heat oil until sizzling.
    (It is ready when a square of bread cooks quickly.) Fry yams in a large frying pan until brown on each side.
    Drain on paper towels and blot off the extra fat.
    Sprinkle with salt before serving.
    Makes 4 servings.
