Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    1/2 c. chopped celery
    1/2 c. diced cheese
    1 (10 oz.) can cream of mushroom soup (undiluted)
    salt and pepper to taste
    10 crackers, crushed
    butter to taste
Preparation
    Wash eggplant and cut in cubes.
    Boil 3 minutes or until tender; drain.
    Combine ingredients.
    Place in baking dish.
    Dot with butter.
    Bake at 375\u00b0 for 15 to 20 minutes or until bubbles. Place cheese slices on top.
    Yield:
    6 servings.
