Mexican Corn Bread Casserole - cooking recipe

Ingredients
    1 lb. ground beef (extra lean)
    1/4 c. chopped onion
    2 Tbsp. chopped jalapenos or 2 Tbsp. chopped green chiles
    2 eggs, beaten
    1 can cream-style corn
    2/3 c. milk (2%)
    1 envelope corn bread mix
    6 oz. Cheddar cheese, grated
Preparation
    Preheat oven to 425\u00b0.
    Brown ground beef until crumbly, draining off any excess fat.
    Add onions and jalapenos.
    Combine eggs, 1 cup of corn and milk and add to corn bread mix; stir just until dry ingredients are moistened.
    Pour half of corn bread batter into greased 9-inch square pan.
    Top with beef mixture, cheese and remaining corn.
    Pour onto half of corn bread batter on top.
    Bake for 25 to 30 minutes.
    Will serve approximately 8 people.
