Dandelion Greens - cooking recipe

Ingredients
    fresh young dandelion leaves
Preparation
    Pick over carefully (they can be used until they bloom).
    Wash in several waters.
    Put in boiling water with a piece of salt pork.
    Boil 1 hour.
    Drain well.
    Add salt (to taste) to boiling water; boil 2 more hours.
    When well done and tender, turn into colander and drain.
    Goes well with soup beans and onions.
