Easy Stuffed Peppers - cooking recipe

Ingredients
    1 large onion, finely chopped
    1 lb. brown and serve turkey sausage
    1 c. grated light variety Cheddar cheese
    2 Tbsp. oil (Heart Beat) or 1 Tbsp. olive oil
    1/2 c. seasoned bread crumbs
    1 to 2 egg whites, beaten
    4 green, red or yellow bell peppers, halved and cleaned
Preparation
    Preheat oven to 350\u00b0.
    Blanch the peppers and set aside.
    In large skillet, saute the onion in oil until softened.
    Add sausage; saute until browned.
    Remove skillet from the heat; add bread crumbs, cheese and egg whites and mix well.
    Cut peppers lengthwise, then stuff with sausage mixture.
    Place into baking dish; bake for 20 to 25 minutes.
    Yield: 4 servings.
