Apricot Oat Muffins - cooking recipe

Ingredients
    1 1/4 c. all-purpose flour
    1 1/4 c. uncooked old-fashioned rolled oats
    1 Tbsp. baking powder
    3/4 c. firmly packed brown sugar
    1/4 tsp. salt
    3/4 c. skim milk (room temperature)
    1 large egg, lightly beaten
    2 Tbsp. canola oil
    2 tsp. vanilla extract
    1 c. chopped dried apricots or other dried fruit (such as raisins, chopped dates or cherries)
Preparation
    Preheat oven to 400\u00b0 and lightly butter or spray the muffin tin.
    In a large bowl, stir together flour, oats, brown sugar, baking powder and salt.
    In another bowl, stir together milk, egg, oil and vanilla until blended.
    Make a well in the center of the dry ingredients; add milk mixture and stir just to combine.
    Stir in apricots or other dried fruit.
    Spoon batter into prepared muffin cups.
    Bake for 15 to 20 minutes or until a toothpick inserted in the center of one muffin comes out clean.
    Take muffins from oven and place on wire rack.
    Cool for 5 minutes before removing muffins from cups.
    Finish cooling on rack.
    Makes 12 servings.
