Zucchini Fritters - cooking recipe

Ingredients
    1/3 c. biscuit mix
    1/4 c. grated Parmesan cheese
    1/8 tsp. pepper
    2 eggs, slightly beaten
    2 c. shredded, unpeeled zucchini (2 medium)
    2 Tbsp. butter
Preparation
    In a bowl, stir together the biscuit mix, Parmesan cheese and pepper.
    Stir in beaten eggs.
    Fold in zucchini.
    In a large, heavy skillet, melt butter.
    Use 2 tablespoons of mixture for each fritter.
    Cook until brown on each side.
