Melon Mousse - cooking recipe

Ingredients
    2 c. cubed melon (any type but watermelon)
    1/2 c. orange juice
    2 Tbsp. sugar
    1 envelope unflavored gelatin
    3/4 c. whipping cream
    fresh mint (optional)
Preparation
    In a blender container or a food processor bowl, combine melon and orange juice.
    Cover and blend or process until smooth.
    In a small saucepan combine sugar and gelatin.
    Stir in melon puree. Cook and stir over medium heat until gelatin and sugar are dissolved.
    Chill until partially set (the consistency of unbeaten egg whites).
