Festival Sweet Potatoes - cooking recipe

Ingredients
    3 large sweet potatoes or yams
    1 tsp. salt
    1/2 c. packed brown sugar
    1 (8 oz.) can sliced pineapple (6 slices)
    1/3 c. rum, brandy, dry sherry or water
Preparation
    Preheat oven to 350\u00b0. In medium saucepan, boil sweet potatoes in their skins 20 to 30 minutes or until tender. Peel and put through ricer or mash. Season with salt and 1/4 cup brown sugar or to taste. Form into balls, using an ice cream scoop, and place amount on top of each slice of pineapple. Heat remaining brown sugar and liquid together until sugar is dissolved; pour over potatoes and pineapple. Bake 30 minutes, basting often with syrup in pan. Serves 6.
