Perch New Orleans - cooking recipe

Ingredients
    1 lb. perch, cut fillets in 2-inch pieces
    2 Tbsp. butter
    2 Tbsp. flour
    1 c. chopped onion
    1 c. chopped celery
    3/4 c. chopped green pepper
    3 1/2 c. beef broth
    1 (8 oz.) can tomato sauce
    1 tsp. pickling spice
    1 1/2 tsp. salt
    1/2 tsp. pepper
    3 c. hot, cooked rice
Preparation
    In a skillet, saute onion, celery and green pepper.
    Add broth, tomato sauce, salt and pepper.
    Place pickling spice in a small piece of cheesecloth and tie closed.
    Add to sauce and simmer for 45 minutes.
    In a separate skillet, flour and brown fish.
    Remove the pickling spice; add the fish.
    Simmer for 10 minutes.
    Serve over rice.
    Serves 6.
