Zippy Cheddar Crisps - cooking recipe

Ingredients
    1 c. yellow cornmeal
    2 Tbsp. butter or margarine
    1 Tbsp. sugar
    3/4 c. (3 oz.) shredded Cheddar cheese
    3 green onions, minced
    1 to 2 jalapeno peppers, seeded and minced
    1 Tbsp. chopped pimiento
    1 c. boiling water
    1/2 tsp. salt
Preparation
    Preheat oven to 400\u00b0.
    Generously grease 2 large baking sheets; set aside.
    In medium bowl, combine cornmeal, butter, sugar and salt.
    Stir in boiling water, mixing until blended.
    Stir in cheese, onions, peppers and pimiento.
    Drop level teaspoon batter, 1 inch apart onto prepared baking sheets.
    With spatula flatten batter into 2-inch rounds.
    Bake 18 minutes or until golden and slightly brown around edges.
    Makes 6 dozen.
