Herbed Leg Of Lamb - cooking recipe

Ingredients
    5 1/2 to 6 lb. leg of lamb
    2 cloves garlic
    1 Tbsp. dry mustard
    1 tsp. salt
    1/8 tsp. ground pepper
    1/4 to 1/2 tsp. ground thyme
    1/2 tsp. crushed rosemary
    1 Tbsp. lemon juice
Preparation
    Rub all surfaces of lamb with 1 clove garlic.
    Cut this clove and one more into slivers.
    Slit skin of lamb at intervals and insert garlic slivers.
    Blend next 6 ingredients to a paste. Spread over surface of roast.
    Place lamb on a rack, covered, in roasting pan and roast for 2 to 2 1/2 hours at 325\u00b0.
    Check with roasting thermometer (150\u00b0 for medium rare to 175\u00b0 for well done). Serves 6 to 8.
