1 1/2 c. all-purpose flour
1/2 c. granulated sugar
1/2 c. margarine
1 large egg
2 tsp. vanilla extract
1/8 tsp. salt
1 oz. semi-sweet chocolate, melted
3 Tbsp. shredded coconut
Preparation

Preheat the oven to 350\u00b0.
In a food processor, or with an electric mixer, blend the flour, sugar, margarine, egg, vanilla and salt to form a stiff dough.
Roll 1/2 tablespoon of the dough into a ball; repeat with the remaining dough to make 32 cookies. Place the cookies 1 inch apart on a nonstick baking sheet; lightly press each one with your fingers to flatten slightly.
Bake until the cookies are firm and the bottoms are lightly golden, 10 to 15 minutes.
Transfer the cookies to a rack to cool.
Drizzle each cooled cookie with the chocolate and sprinkle evenly with the coconut.
