Susan'S Hush Puppies - cooking recipe

Ingredients
    1/4 c. milk or 1/4 to 1/2 c. buttermilk
    1/2 tsp. lemon juice
    1/4 c. self-rising flour
    1/2 c. self-rising corn meal mix
    1/2 large onion, finely chopped
    1 egg, beaten
    cooking oil
Preparation
    Mix milk and lemon juice together and set aside for 5 to 10 minutes to sour; add egg and beat well.
    In a mixing bowl, combine the flour, corn meal mix and onion, mixing well.
    Add only enough of the milk mixture to moisten the dry ingredients; the batter should be thick (don't overmix).
    Allow batter to stand at room temperature for at least 30 minutes.
    Using a small spoon, drop batter into hot oil, rinsing the spoon in between the drops of batter in a glass of cold water.
    Avoid stirring the batter.
    Cook until medium brown and floating.
    Makes 1 dozen hush puppies.
