Quick Chicken Casserole - cooking recipe
Ingredients

2 Tbsp. finely chopped onion
1 c. sliced celery
1 c. diced, cooked chicken or turkey
1 can cream of chicken or cream of mushroom soup
1/2 tsp. salt
1/4 tsp. pepper
1 Tbsp. lemon juice
3/4 c. mayonnaise
1/4 c. water
3 hard-boiled eggs, sliced
2 c. crushed potato chips
Preparation

Saute onion and celery in butter.
Combine chicken, celery, onion, nuts, rice, chicken or mushroom soup, salt, pepper and lemon juice.
Mix mayonnaise with water; add to chicken mixture. Gently stir in eggs.
Turn into greased 9-inch square pan.
Bake at 450\u00b0 for 15 minutes or until bubbly.
Top with potato chips and bake 10 more minutes.
