Ingredients

5 to 7 unpeeled potatoes, steamed until tender (leftovers may be used)
1/2 c. soy or cashew milk
1 1/2 tsp. onion powder
1 tsp. salt or to taste
2 to 3 Tbsp. vegetable oil
3 to 4 Tbsp. freshly chopped parsley or 1 1/2 to 2 Tbsp. dried
Preparation

Mash the potatoes until smooth with the remaining ingredients. Should be moist to form into patties.
Place on a well-oiled baking sheet.
Bake at 400\u00b0 for 20 to 40 minutes, turning once.
Pancakes should form a brown crust.
Serve with fresh parsley and tomatoes. A complement to tofu.
Yields 1 dozen.
