Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. cooking oil
    2 1/2 c. sugar
    3 c. peeled and grated zucchini
    1 Tbsp. vanilla
    3 c. plus 3 Tbsp. self-rising flour
    1 Tbsp. cinnamon
    1/2 c. chopped nuts
Preparation
    Beat eggs; add oil, sugar, zucchini and vanilla.
    Mix dry ingredients together and add to other mixture.
    Mix lightly but thoroughly.
    Grease and flour 2 loaf pans.
    Bake at 325\u00b0
    for 60 to 65 minutes.
