Potato Soup - cooking recipe

Ingredients
    5 lb. potatoes, peeled and diced
    1 onion chopped
    1 can cream of celery soup
    1/2 lb. Velveeta cheese
    1/2 tsp. thyme
    dash salt/pepper
Preparation
    Barely cover potatoes & onions with water, boil for 20 minutes or until mixture starts to thicken.
    Add cream of celery soup and bring to a boil.
    Add cheese, thyme, salt & pepper.
    Cook until creamy.
    Serve with bacon bits, chives or sour cream.
