Sweet And Sour Red Cabbage - cooking recipe

Ingredients
    1 Tbsp. oil or bacon grease
    1 medium chopped onion
    1 medium head red cabbage
    1 tsp. sugar
    3/4 c. cider vinegar
    1/2 c. apple juice
    salt and pepper to taste
Preparation
    Chop cabbage but do not shred.
    In large pot, brown onion in oil just until soft, but not brown.
    Add rest of the ingredients. Cover and cook slowly, stirring occasionally for 1 hour.
    Add more sugar, if you like it sweeter.
    Serve with slotted spoon.
    Keeps well in refrigerator for days.
