Ingredients

2 c. milk
1/2 c. sugar
1 envelope unflavored gelatin
1/2 tsp. salt
1/4 c. rice
1 tsp. vanilla
1/2 tsp. lemon extract
1 c. heavy cream
Preparation

Heat milk, sugar and gelatin in top of double boiler over very low heat, stirring occasionally, until small bubbles form around edge of milk.
Stir in salt and rice.
Place over boiling water; cover and cook 1 hour or until rice is soft.
Stir in extract and cool to room temperature.
Whip cream and fold into rice mixture; chill several hours.
Serves 6.
