Beef Creole - cooking recipe
Ingredients

1 to 2 lb. lean stew meat
4 Tbsp. shortening
2 Tbsp. flour
1/2 c. minced onion
1/2 c. chopped tomato or 1 (16 oz.) can whole, peeled tomatoes, chopped
1 tsp. minced garlic
1 Tbsp. minced green pepper
1 Tbsp. minced parsley or dried parsley
salt and pepper to taste
Preparation

Partially freeze meat, then slice thin.
Fry in a Dutch oven or large pot in the shortening until brown.
Then remove from Dutch oven.
Saute onion until tender.
Then brown flour.
Add the tomatoes, garlic, green pepper, parsley, salt and pepper.
Add the meat and 2 cups of water.
Cover and cook over low heat for about 1 hour and 30 minutes or until tender.
Serve with cooked rice.
