Tennessee Hopping John - cooking recipe

Ingredients
    2 c. black-eyed peas
    1/2 lb. lean salt pork
    2 c. rice
    1 medium chopped onion
    1 c. diced tomatoes
    1 dash Tabasco
Preparation
    Wash peas and soak overnight.
    Drain.
    Fry salt pork, tomatoes and onion well.
    Add 2 1/2 pints water, beans, rice, salt and pepper to season to taste.
    Cook slowly in covered pot for approximately 1 hour or until all liquid has dried out.
