Ingredients

1 1/2 c. apricots
4 eggs, slightly beaten
3 c. grated raw sweet potatoes
2 c. milk
1/4 c. margarine
2 c. packed light brown sugar
1/4 tsp. cinnamon
1/4 tsp. salt
Preparation

Place apricots in 1 cup water and bring to boil.
Simmer until tender.
Drain and cool.
Mix all remaining ingredients.
Fold in apricots. Put in 2-quart casserole.
Bake in slow oven (325\u00b0) about 40 minutes.
Serve with cream.
Yields 8 servings.
