Mexicali Meatloaf - cooking recipe
Ingredients

1 1/2 lb. ground beef
3/4 c. quick oats
1/2 c. tomato juice
1 egg, beaten
2 Tbsp. minced onions
1 Tbsp. chili powder
1 tsp. black pepper
3 Tbsp. butter
3 Tbsp. self-rising flour
1 1/2 c. milk
8 slices American cheese, broken
1 (12 oz.) can corn with pepper
2 small green peppers, cut in rings
Preparation

Mix first 7 ingredients and bake.
Melt butter in saucepan. Add flour and cook over low heat.
Stir until bubbly, gradually adding milk.
Cook, stirring constantly until smooth and thickened.
Add cheese. Stir until cheese melts.
Stir in corn. Pour over cooked meatloaf.
Bake 20 minutes.
