Fried Eggplant - cooking recipe
Ingredients

1 medium eggplant
1/2 tsp. salt
1/2 c. cornmeal
1/2 c. shortening
Preparation

Cut eggplant into thin slices.
Sprinkle with salt; let stand for 30 minutes.
Dredge in cornmeal.
Fry in shortening over medium heat until brown.
Drain on paper towels.
