Mom'S Hearty Vegetable Soup - cooking recipe
Ingredients

4 stalks celery
1 1/2 lb. beef with bone
8 c. water
4 tsp. salt
2 tsp. parsley
1/4 tsp. ground pepper
2 stalks celery, chopped
6 medium potatoes
8 small carrots
2 medium onions
2 (1 lb. 4 oz. each) cans tomatoes
Preparation

Wash celery stalks and leaves; cut stalks in pieces.
Cut meat off bone and cut meat into 1 1/2-inch pieces.
Place meat and meat bone in saucepan.
Add water, salt, parsley, pepper and celery.
Cook gently 2 hours or until meat is tender.
Meanwhile, peel and dice potatoes.
Scrape carrots and cut in 1/2-inch pieces and peel and thinly slice onions.
Add vegetables to soup; continue to cook 1 hour longer or until vegetables are tender. Add tomatoes; cook soup 10 minutes longer.
Taste to correct seasonings and serve.
