Ingredients

16 c. chopped pears (8 lb.)
1 1/2 lb. seedless raisins
1 lb. brown sugar
3 c. white sugar
1 1/2 jars ginger marmalade
3 Tbsp. salt
1/2 tsp. pepper
1 tsp. ground ginger
6 c. cider vinegar
1 or 2 cloves garlic, pressed
3 lemons, chopped fine and grated rind
3 Tbsp. chili powder
3 tsp. mustard seed
12 shakes Tabasco sauce
Preparation

Put all together in a large pan. Bring to a boil.
Let bubble 20 or 25 minutes. Test to see if pears are done.
Put in jars. Makes 13 pints.
