Apple, Carrot Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 tsp. soda
    1/2 tsp. salt
    2 tsp. ground cinnamon
    1 c. sugar
    2 c. grated carrots
    1 large tart green apple, peeled, cored and grated
    1/2 c. raisins
    1/2 c. sliced almonds
    1/2 c. flaked coconut
    3 eggs, slightly beaten
    2/3 c. vegetable oil
    2 tsp. vanilla
Preparation
    Combine first 5 ingredients in a large bowl.
    Stir in carrots, apple, raisins, almonds and coconut.
    Make a well in the center of mixture.
    Combine eggs, oil and vanilla; add to dry ingredients, stirring just until moistened.
    Spoon into greased muffin tins or pan until 2/3 full.
    Bake at 350\u00b0 for 20 or 25 minutes.
    Remove from pan immediately.
    Yields 24 muffins.
