Walnut Zucchini Bread - cooking recipe

Ingredients
    1/2 to 1 c. chopped nuts
    4 eggs or 1 carton Egg Beaters to equal 4 eggs
    2 c. sugar
    1 c. plus 1 Tbsp. vegetable oil or applesauce
    3 1/2 c. unsifted flour
    1 1/2 tsp. baking soda
    1 1/2 tsp. salt
    3/4 tsp. baking powder
    1 tsp. cinnamon
    1 c. grated plus 1 c. shredded zucchini
    1 c. raisins
    1 tsp. vanilla
Preparation
    Beat sugar into eggs or Egg Beaters.
    Then beat in oil (or applesauce).
    Combine dry ingredients; add to first mixture.
    As you add the dry ingredients, add it one at a time and add a little bit of zucchini in between each one.
    Stir in raisins, walnuts and vanilla.
    Put into 2 greased and floured loaf pans (9 x 5 x 2 3/4-inch).
    Bake at 350\u00b0 for 55 minutes (may take longer in certain ovens).
    Let stand for 10 minutes.
    Remove and let cool. The loaves freeze well.
