Garlic Mashed Potatoes - cooking recipe

Ingredients
    3 large baking potatoes
    1 tsp. vegetable oil
    2 Tbsp. butter or margarine
    1/4 c. sour cream
    2 cloves garlic, crushed
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Scrub potatoes and rub evenly with vegetable oil.
    Bake at 400\u00b0 for 1 hour or until done.
    Cut potatoes in half.
    Scoop out pulp, discarding skin.
    Combine the potato pulp, butter and remaining ingredients in a mixing bowl and beat at medium speed with an electric mixer until fluffy.
    Makes 3 cups.
