Saucy Skillet Potatoes - cooking recipe

Ingredients
    1 Tbsp. margarine or butter
    1 c. chopped onions
    1/2 c. mayonnaise
    1/3 c. cider vinegar
    1 tsp. sugar
    1 3/4 tsp. salt
    1/4 tsp. pepper
    4 medium potatoes, cooked, peeled and sliced (4 c.)
    1 Tbsp. chopped parsley
    1 Tbsp. cooked, crumbled bacon (optional)
Preparation
    In a large skillet, melt margarine over medium heat.
    Add onions; cook 2 to 3 minutes or until tender-crisp.
    Stir in the next five ingredients.
    Add potatoes; cook, stirring constantly, for 2 minutes or until hot (do not boil).
    Garnish with parsley and bacon.
    Makes four to six servings.
