California Quiche - cooking recipe

Ingredients
    1 Quiche Crust recipe
    1 medium onion, thinly sliced
    2 tsp. low calorie margarine
    1/2 lb. mushrooms, sliced
    1 tsp. fresh lemon juice
    1 1/2 tsp. flour
    1/2 c. egg substitute or 3 eggs
    1 c. evaporated nonfat milk
    dash of nutmeg and paprika
    pepper to taste
    1 c. shredded low sodium Gouda or Cheddar
    2 Tbsp. Romano cheese (optional)
Preparation
    Melt margarine in skillet and saute onion until tender.
    Add mushrooms and cook over medium heat until tender, about 3 minutes. Stir in lemon juice. Cover and simmer 2 minutes.
    Sprinkle with flour and cook, stirring constantly, until mushroom liquid has thickened.
    Set aside.
