Chicken Rollantini With Pesto - cooking recipe

Ingredients
    8 skinless, boneless chicken breasts (5 oz. each)
    4 thin slices ham
    8 oz. Mozzarella cheese, cut in 2 x 1/2 x 1/2-inch sticks
    3/4 c. Pesto (homemade or jar)
    1/2 c. flour
    2 eggs, beaten with 2 Tbsp. water
    2 c. dry bread crumbs
    2 Tbsp. butter
    2 Tbsp. olive oil
Preparation
    Preheat oven to 350\u00b0.
    Cut pocket in each chicken breast; roll a piece of ham around each piece of Mozzarella cheese.
    Smear inside of chicken pocket with 1 1/2 teaspoons Pesto.
    Place ham and cheese roll in pocket and press together.
    Dredge chicken in flour; shake off excess.
    Dip in egg; dredge in bread crumbs.
