Sweet Potato Carrot Gratin - cooking recipe

Ingredients
    4 c. sweet potatoes, peeled and cut into 1/2-inch cubes
    2 c. sliced carrots (I use pre-sliced carrots from the supermarket)
    1/3 c. orange juice
    2 Tbsp. brown sugar
    1/2 c. dried cranberries
    1/4 tsp. each salt and pepper
    3/4 c. shredded Cheddar
Preparation
    Preheat oven to 350\u00b0.
    Put sweet potatoes and carrots in pot; cover with water.
    Bring to boil and cook for ten minutes or until tender.
    In large bowl, combine next four ingredients (juice to salt and pepper).
    Drain sweet potato mixture; add to bowl and toss to coat.
    Transfer to casserole dish coated with nonstick spray and bake for 20 minutes.
    Sprinkle cheese on top and bake for ten minutes more.
