Hominy - cooking recipe
Ingredients

5 oz. lye
6 qt. cold water
5 qt. corn (dry field corn)
Preparation

Dissolve lye in the 6 quarts of water, then add the corn and let stand for 15 hours.
Drain lye water from corn.
Add more cold water and wash thoroughly several times to remove corn hulls and lye.
Rubbing in a soft bag helps to remove hulls.
All hulls and black tips should be off.
If corn is discolored soak overnight in clear water and small amount of salt.
Drain.
Add fresh water and 5 tablespoons salt.
Boil 3 to 4 hours in a large covered kettle. Change water once or twice while cooking.
Be sure to keep kettle covered.
Makes 15 to 20 quarts of hominy.
