Green Bean Salad - cooking recipe

Ingredients
    2 lb. fresh green beans
    1/2 c. olive oil
    1 Tbsp. wine vinegar
    1 large clove garlic, peeled
    salt and pepper
    pinch of crushed red pepper
Preparation
    Cut tips off beans and slice 2-inches in length.
    Cook beans in a small amount of lightly salted water in a covered saucepan for 15 to 20 minutes or until tender.
    Drain.
    Set aside to cool. Combine oil, vinegar, garlic, salt and pepper separately and set aside.
    Add cooled beans to oil mixture; mix well.
    Refrigerate 1 1/2 hours.
    Discard garlic before serving.
    Makes 6 servings.
