Ingredients

flowerets from a medium head cauliflower
2 eggs
60 ml water
2 ml salt
350 ml fine dry bread crumbs
fat (for deep frying) *
Preparation

Cook the cauliflower until almost tender.
Beat the egg, salt and water together until blended.
Dip flowerets into egg, then crumbs until coated and set aside to dry.
Heat fat to 190\u00b0C. Slip breaded flowerets into hot fat, a few at a time, and cook until lightly browned.
Remove from fat; drain on absorbent paper.
Serve.
Strain fat after it cools.
Try different vegetables for a variety of flavors.
