Old-Fashioned Rhubarb Cake - cooking recipe
Ingredients

1/2 c. margarine
1 1/4 c. sugar
1 egg
1 tsp. baking soda
2 c. chopped rhubarb (can substitute peaches)
1 c. buttermilk
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1/2 tsp. cinnamon
Preparation

In a bowl, cream the butter and 1 cup of sugar.
Add egg; beat well.
Combine buttermilk and vanilla in a separate bowl.
Combine flour, baking soda and salt.
Add alternately with buttermilk-vanilla to creamed mixture.
Stir in fruit.
Spread in greased baking pan.
Combine remaining sugar and cinnamon. Sprinkle over batter.
Bake at 350\u00b0 for 35 minutes.
